Beth Collins is a freelance writer who recently moved to her dream city, Portland, Oregon. Before giving into the lure of the west coast, Beth spent seven years in New York, where she was lucky enough to work for publications that paid her to indulge in her two biggest passions—food and travel. She launched her career, fresh out of graduate school, at Food & Wine magazine, then moved on to Woman’s Day Special Interest Publications (where she met Lindsey), and spent her last three years in the city as an editor at Budget Travel magazine. She currently writes for Budget Travel, Food & Wine and Frommers.com, among others. When she’s not on assignment, Beth is testing out new recipes, poring over food blogs, helping friends plan their vacations (occupational hazard), and exploring her new city with her husband, Darrell, and their aging but endlessly eager yellow lab, Oscar.

Lindsey Emery is a freelance health and fitness writer who cannot wait to call the west coast home. After eight-plus years in Brooklyn, she’s finally moving to a place where she (and her super-sporty husband, Eddy) can run, bike and hike without all the hassle, Portland, Oregon. Lindsey originally landed in NYC with a degree in journalism and a job at Woman’s Day Special Interest Publications. She’s covered health, fitness and home for Men’s Health International, For Me magazine and Fitness magazine, where she spent the last four years as a senior fitness editor, mastering the art of wearing spandex on TV like nobody’s business. Lindsey now writes for Fitness, Self, Shape and Women’s Health, among others. She’s run five marathons, about 10 half-marathons and hopes to tackle a triathlon as soon as she learns how to swim like a normal person. Aside from all things active, Lindsey also enjoys reading, baking and hanging out with her adorably chunky cat, Reggie.
