Walmart Supercenters can be, well, kinda super. No, seriously. We walked into one beside our hotel last night expecting nothing short of satisfactory, and what did we see? An entire produce section staring at us at the entrance. So this morning’s bananas, apples and plums were made possible by Walmart. Like we said, super. Especially when you’re in a place that prides itself on having the world’s largest prairie dog—not a farmer’s market or good grocery store.
While the Holiday Inn Express where we were staying was totally fine, its “gym” consisted of three or four cardio machines in a very small room, and its pool was very, very kid-friendly (ie, lap-free). Needless to say, neither were calling our names. Instead, we opted to take advantage of our handy-dandy FitKit instead. Created by NYC-based trainer Amie Hoff, this cute travel pack includes a jump rope, resistance band, resistance tubes and more. Channeling the energy of our inner 10-year-olds, we each jumped rope until we felt out of breath (trust us, this didn’t take long!).
With a touch of cardio under our belts, we pointed Fonda in the direction of Denver and drove our way out of Kansas. We were quite happy to discover, along the way, that sunflower fields were not just an old myth about the western part of the state. They do in fact exist. Apparently, you have to ride past the world’s biggest prairie dog first!
We met Beth’s friend Rachel in Denver for a bite to eat at Snooze, which came highly recommended by our other fabulous friend Rachel. Lindsey had a breakfast burrito and Beth went with yummy Huevos Rancheros. The retro decor set the perfect scene for a quick catch-up session.
Then off to Boulder! We were surprised at how quick the drive to our friend Heather’s house was. She greeted us with champagne cocktails (umm… yes, please!) and some great ideas on how to be active in her town. First off, a bike ride on cruisers from Pedal to Properties. This amazing real estate company uses bikes to show its clients new homes and properties. Such a great way to get to know an area and figure out how active you can be around it before you move in. Brilliant, if you ask us!
After picking up our bikes, we pedaled our way to Rags consignment shop, which has the best clothing selections handed down by Boulder locals. Beth is in lerve. Big time. We each got a couple of absolutely adorable items and pedaled our way back to Heather’s place. We also witnessed a gorgeous Colorado sunset en route.
After dropping off our bags, we hopped back on the bikes and worked our way into downtown Boulder. We miraculously managed to jump right into a Thursday night group cruiser ride and oh- the spectacle! Guys and girls were dressed in vintage costumes, playing Gogol Bordello and Modest Mouse on their boom boxes and riding their bikes through the city streets like there was no tomorrow. We kept on pedaling and couldn’t have been more amused by our surroundings.
We made our way through the crowd to The Kitchen, where we had a delicious meal (and drinks) filled with locally sourced ingredients and organic goodness. The wood fired margherita pizza hit the spot like nothing else. Heather’s lavendar lemonade cocktail was pretty tasty, too. We then cruised on back to the house and hit the sheets, ready to have sweet dreams about another day in Colorado.
